        Using a knife, slice the zucchini diagonally into 1/8-inch-thick slices and transfer to a colander set over a bowl. Sprinkle with salt, stir well, let stand for 5 minutes, then rinse with cold water. Place layer on paper towels and dry.
        Divide the melon, zucchini and chicken among 4 plates. Using a vegetable peeler, cut about a quarter of the cheese into swirls, then divide the swirls and mint among 4 plates. Drizzle each plate with oil and lime juice. Season with salt and pepper. Serve immediately.
        delicious! I read other reviews first and that influenced how I made this dish. I had cantaloupe in my freezer because I saw a comment about how cute the colors were together, so I used that. Second, I used poached chicken breasts because I had some on hand and didn’t know if my guests would want them smoked. Third, I dice the melon, toss it all in a dressing like a salad, and chill it in the refrigerator for a few hours. It really seems to bring the flavors together. I gave this to my sorority sisters and they asked me to do it again. Believe me, I do this every time the melons ripen.
        Really fun and tasty. I will definitely do this again. It’s a shame that the only person who gave this star replaced absolutely every ingredient and thought that maybe they used bad ham. Guys…don’t you think the comment would be less appropriate if you used rotten food and didn’t follow the recipe? We’re trying to help people evaluate recipes. It has nothing to do with “you” and what you experienced that day when you did something remotely related.

        I served this salad as a side dish, so I omitted the chicken. My husband liked it. I didn’t have fresh mint, so I added dried mint to the olive oil. I can’t wait to try the fresh mint.
        This recipe is amazing! ! It’s amazing what you can do with zucchini. I omitted the chicken (we didn’t have any today) and used cantaloupe (fresh from a partner farm – perfect) instead of honeydew. The colors on the plate are beautiful (I used yellow zucchini). I fed this to my zucchini-hating husband and he ate a third of it! My kids love it too. Toasted pecans would be a great addition.
        Wow, I’m tired of mixing all the flavors, but this is so good! Instead of chicken, I substituted crumbled bacon and served this dish as a side dish. Even my zucchini-hating kids love it. (I did not drizzle them with the olive oil/lime juice mixture). The zuk is so thin and tasty that you will barely notice it. I will definitely serve this again.
        I gave this a 1 fork because I took advice from others and I just didn’t like how it turned out. Tried the ham and maybe I got something bad because it smelled a little fishy(?). Spent too much on ham and too little on cheese (I should have spent more on cheese!). This is my first time eating raw zucchini and I’m learning that I prefer it cooked. Use basil instead of mint. So the only thing I like is melon. Maybe one day I’ll try it with chicken and mint, but right now it’s not in the recipe box.
